VEGETABLE BIRIYANI Preparation Time : 15 MIN Cooking Time : 30 MIN Ingredients
Rice 1 cup, Coconut milk 2 cups, Onion 1 chopped, Cauliflower 1/4 cup chopped, Carrot 1/4 cup chopped, Beans 1/4 cup chopped, Peas 1/4 cup shelled, Tomato 1,cinnamon stick 1 inch, Ginger1 inch, Garlic 2 pods, Red chillies 2 nos, Cardamon 1,Cloves 2,Ghee 1 tbsp, Oil 1 tbsp, Salt to taste. Method
1Wash rice and put it on colander for draining. 2Heat a pressure pan with 1 tbsp of oil. 3Add onions and fry till they becomes transparent. 4Add cauliflower. Fry till both become light brown. 5Add the beans and carrots. Simmer. 6Grind tomatoes, dalchini, ilaichi,cloves, red chillies, ginger, garlic to a fine paste. 7 Put in the pressure pan with the vegetables. Close the pressure pan cook for some time. Let it cool. 8 Add the rice, salt and coconut milk to the pan. 9Close the pressure pan and cook till liquid is absorbed and rice is fluffy. Let it cool & top it with ghee .
Serve hot with onion raita, and lemon wedges.
